Taste of Africa: Heuningkoek

Heuningkoek is honey or honeycomb in Afrikaans.

South African Honey Cake

Ingredients:

1 ½ cups self rising flour or (1 ½ cups regular flour and 2 ¼ teaspoon of baking powder)

1/3 cup melted butter      1 cup sugar       1 pinch salt       1 egg       1 cup milk

½ cup honey for sauce       ½ cup butter for sauce

Preparation:

Cake: 1. Preheat oven to 350F/180C.  2. Mix the first 6 ingredients together.  3. Pour mix in 9×9 glass dish. Bake for 20 minutes or until light brown.

Sauce: 1. Place the last 2 ingredients together in sauce pan on stove.  2. Bring almost to boiling point. Try to have ready when cake is done.

honeyOnce cake is baked, prick cake with fork to absorb the hot honey sauce. Pour sauce evenly over the cake. Let cool some but serve warm.

This is a super sweet and easy cake. Jeremy and I enjoyed it several days. Reminds me of Psalms 119:103, “How sweet your words taste to me; they are sweeter than honey.” God’s WORD is so sweet and you just want more once you taste it.

Thankful today for the sweet church we shared with yesterday morning. They were small but full of God’s loving sweetness. We were truly blessed by them and their heart to support us in prayer. Their love offering will be multiplied for their kindness.
