Well, it is going to be African dinner night. It is cool and rainy here in Northeast Tennessee today, so soup sounds good. Here is the recipe I am going to try. I will let you know how we like it.
African Peanut Soup
Ingredients:
2 tablespoons olive oil 8 cups vegetable broth or stock
2 medium onions, chopped ¼ teaspoon pepper
2 large red bell peppers, chopped ¼ teaspoon chili powder (optional)
4 cloves garlic minced 2/3 cup extra crunchy peanut butter
1 (28oz.) can crushed tomatoes, with liquid ½ cup uncooked brown rice
Directions:
- Heat oil in a large stock pot over medium high heat. Cook onions and bell pepper until lightly browned and tender, stirring in garlic when almost done to prevent burning. Stir in tomatoes, vegetable stock, pepper, and chili powder. Reduce heat to low and simmer, uncovered, for 30 minutes.
- Stir in rice, cover, and simmer another 15 minutes or until rice is tender. Stir in peanut butter until well blended and serve.
Serve with a dollop of sour cream on top of each bowl and some crusty bread for dipping.
Serves 10, I am going to half recipe for just Jeremy and I. But in Africa they say you should be ready for guests at dinner always.
